Seasoning: The flavors of garlic and rosemary combine to complement the tender potatoes. You can also add fresh dried bell pepper or oregano.
Potatoes: You can basically use potatoes for this recipe, but you may need to adjust the cooking time. Red or new potatoes, Russet or Yukon Gold are favorite choices (more on that later).
Extra virgin olive oil: High quality extra virgin olive oil is your best friend here. Suitable for roasting potatoes
Salt and Pepper: Sea salt is essential. If you like, add a pinch of sea salt or Maldon salt before serving. Freshly ground black pepper is optional, but adds more flavor to the dish.
Crushed New Potatoes Recipe
What is the best potato for frying? The short answer is that most potatoes are good for frying. But for best results, use the best potatoes, including:
Roast potatoes: These are very starchy and usually good for frying, however they work great in this recipe, still nice and crunchy on the outside but soft and fluffy on the inside.
New potatoes: I love roasted new potatoes because you can leave them in their skins because they cook so quickly.
They’re less starchy than Yukon or Straight potatoes, but my simple double-bake method (more on that later) still gives you deliciously crispy, creamy potatoes.

Somewhere between starchy and waxy potatoes, Yukon Gold potatoes are the perfect size and shape, meaning you can easily slice them and cook them flat.

Welcome to day seven of my first Holiday Salad Marathon, where I’m sharing 30 salads in a row just in time for Christmas, just for something different from the usual sugar-laden pastry stands!
I realize today’s recipe isn’t technically a salad and there are no leafy greens in sight. But I consider it a potato staple, and it’s especially useful during the holidays because it doesn’t require the use of an oven (valuable holiday real estate!). So I decided I had to share!
Crispy Garlic Roasted Potatoes
This potato recipe doesn’t have to be rich and super buttery. It should be plain, with a little butter on top of the potatoes, so they can be served with dishes such as squash, ribs or pot roast.
A light layer of butter gives the herbed potatoes (of course) some flavor, along with the freshness of the veggies!
Again, because it’s not too heavy, the seafood is also great – any fish, lobster/shrimp, rock lobster, Moreton Bay herring, rock lobster, etc. Feel the glow
