The conversation went like this: I stopped cooking a while ago and found an old set in the garage. It is outdated, can I still use it? The answer is always: yes, it’s okay, but it may not be good to use yeast past its expiration date.

I recently pulled out a bowl of Young’s All-Purpose Yeast from the cupboard to make something, only to realize that it was 2 months old. We currently operate a beer store from home, luckily I just needed to sell another store. But we finished on time and some products were missing. The good news is there’s an easy way to check for old yeast. Sometimes called sourdough, all you need to do is feed the yeast with liquid and sugar.

So, the foam that forms on top is a clear sign that the yeast is very alive. And when I looked at the area where the foam was missing, I saw small explosions under the surface where the enamel had been cleaned.

You can ferment old yeast. If it does anything, it will speed up the composting process. If it is dead at all, it is still in the process of decomposition.

When someone asks us if they can use an old beer kit, we usually say yes. However, we advise them to buy yeast supplement packs so that if the yeast is not active, they can make fresh yeast instead of throwing away the whole batch.

In fact, it’s always helpful to have a spare batch of yeast with you when you’re baking. Fresh yeast rarely goes bad, but I like to have spare yeast on hand. That means I’m ready if another batch tries to get the yeast, rather than risk ruining the whole batch.

A waste of very good ingredients when old yeast is to blame. That’s why I like to test the yeast before adding it to the rest of the dough.

Fermentation is the process of fermenting active dry yeast before using it in recipes. This is a great way to make sure your yeast is alive and active! It is not necessary to do this with fresh or instant yeast.

So how do I do this and how long does it take? Short answer: 3 simple steps, 5-10 minutes. Sounds good, doesn’t it?!

Heat the water to about 105-110°F (40-43°C). I use a digital food thermometer for accurate measurements (I know, I love it!), but if you don’t have one, you can do it by touch. Make sure the water is warm, but never boiling, scalding, or boiling. I would err on the side of a slightly cooler liquid than hot. If your water is colder than 105°F, it may take longer for the yeast to activate. But if it’s too hot, the yeast will die and not bloom.

Of course, if you use the yeast type, it will be very wasteful.

After 5 minutes you will see signs of life. After 10 minutes the yeast will foam, foam and expand. It will expand to fill half of the glass/container and will have a distinct yeasty smell. This is live and healthy yeast.

If the yeast reacts too slowly or moderately, I discard it and buy new yeast. Using partially leavened bread will cause problems with the bread.

I found dead yeast, though it was several months old. I can also store in the freezer and use expired yeast.

My yeast is vacuum packed in a container. After opening the package, I transfer the yeast to an airtight container and store it in the refrigerator or freezer.

If you store the yeast in the refrigerator or freezer, it is always ready to use. You should not thaw or warm it to room temperature.
